What I’m Eating: The Mediterranean Diet

Everyone close to me has been so confused this week as I explain that I’m starting the Mediterranean Diet. I’ve gained a couple of pounds since we moved as we didn’t have a refrigerator for 2 or 3 weeks and we didn’t have a settled home where I could cook, which meant we were eating out A LOT. Plus, with all the stress I was chowing down on Ben and Jerry’s like no other. With all the sugary coffees (needed for this move!) and processed junk I was eating, I needed to eat clean but still feel full.

I’ve tried other dieting methods in the past like calorie counting or juicing which left me unhappy and hungry. You see results but at what cost! When researching, I came across the Mediterranean Diet which is less about “diet” and more about eating foods that people in the Mediterranean have been thriving off of for years. Which includes vegetables, fruits, nuts, seeds, legumes, potatoes, whole grains, bread, herbs, spices, seafood, fish and extra virgin olive oil. You can also dabble in poultry, eggs, cheese and yogurt, but in moderation.

I’ve given it a try this week and have seriously loved the fresh meals I’ve been making! I’m seriously struggling without my coffee but in the long haul, I know this will be super beneficial. I’ve been eating a ton of fish (so easy to make with just seasonings and lemon!) and yogurts are super easy to eat in the morning as well.
